The default Notes app that comes with Linux Mint helps you create digital sticky notes on your desktop. This allows for quick and easy jotting down of reminders, to-do lists, or any other short pieces of information you need readily visible.
You can create and display multiple notes simultaneously, organizing different thoughts or tasks.
Although you can manually backup/restore these notes, there is an option of enabling automatic backups too.
Here is how to access and configure it:
Open the Notes app from the Mint menu > Accessories.

Click the burger icon and choose Preferences.

Select Backups and enable the option of Automatic backups.

You can select the backup frequency (default is 24 hours) and the number of backups to keep (7 by default). Change these settings as needed.
So from now on, all your notes created in the Notes app will be automatically backed up as per the set schedule.
All done.
