If you are looking for an extremely simple and a minimalistic text editor for Mint, Leafpad can do the job.
To install it quickly from the Terminal, type sudo apt-get install leafpad.
Once installed, it will show up in Accessories menu.
It is very easy to use it and also very fast since it is designed to only be a basic yet powerful text editor.
